The Guv’nor rules his establishment with confident poise, yet he is not a man to be trifled with. Like his beer, his wine is carefully selected to ensure both he and his associates enjoy a wine that hits the spot. The Guv’nor stamps his approval on the cap of each bottle.

A blend-forward sparkling wine made with distinct grapes—Chardonnay and Viura—sourced from selected old vineyards. Early harvesting preserves freshness and aromatic lift, while a portion of Chardonnay is aged in new French and American oak for added complexity. After a second fermentation, the wine rests on its lees for 6–12 weeks, creating a balanced sparkling wine with real personality.
